
Ever wanted to know how to make gluten free peanut butter cookies, that were actually easy to make? Well here ya go!

Ingredients:
1 cup of peanut butter (smooth)
1 cup (200 grams) sugar blend (1/2 cup granulated sugar and 1/2 cup lightly packed brown sugar)
1 large egg
1 teaspoon of baking soda
* Cookies are gluten free!
1.) Preheat oven to 350 degrees F. Lightly grease a baking sheet with butter or line a baking sheet with parchment paper and set aside until dough is ready.
2.) Using the bowl of a stand mixer or medium size bowl, combine peanut butter and sugar mix, and blend until well combined (2 mins.)
3.) Add egg and baking soda, and mix for an additional 2 minutes. Roll into small walnut sized balls (1.5-2.5 inches) for roughly 20-24 cookies. If larger cookies are desired, just increase size of dough balls. You can create a criss-cross pattern with a fork on top of dough (optional).
4.) Bake for 10-12 minutes at 350 degrees F., or until lightly browned. Let cool on a baking sheet for two minutes, then transfer to a wire rack. Once cookies are cooled to a safe temperature, enjoy!
* Cookies will last in an airtight container at room temperature for up to 3-4 days.
